Congee

Congee is a rice gruel or porridge used to support healing and restore a disturbed digestive system. It is often used by healing practitioners and in hospitals to slowly nurse a patient or client back to health by increasing the thickness of the porridge as the digestive system becomes stronger. The wisdom in this recipe comes from China and India, though many other regions have some form of healing recipes like this one.

Gentle Healing

This recipe has been developed to use alongside seasonal cleansing, anytime you feel the digestive system needs a rest, or to support recovery from illness. As you slowly move out of the kitchari mono-diet phase of your gentle cleanse, congee can be a good breakfast or dinner. It can also be used for those engaging in a home cleanse as a first meal of the day or a more simple last meal, if the strict kitchari mono-diet is unappealing. 

If you feel like your digestive fire is hampered after your cleanse, this recipe, and the process of increasing the thickness of the porridge based on what the digestive system can handle, can be a helpful tool to get you back on track. Like kitchari, it can also be used as a one-day-a-week digestive reset anytime.

Flavorful

As with anything, you can keep it simple and bland or spruce it up with some supportive spices or broths instead of using water. I suggest adding some mild spice to aid in digestion alongside a cleanse or in times of illness. It can be supportive to use bone broth instead of water once digestion becomes stronger to make a more nutrient rich porridge.

If you enjoy this healing food, and want to use it as a base for everyday meals outside of a seasonal cleanse or when the digestive fire is not impaired, you can add some vegetables and more flamboyant spices. For nourishing ojas and the vital strength and stability of the body, adding some chopped dates or ground sesame seeds with honey can be supportive and delicious! Using a nourishing bone broth in place of all, or part of the water can also support building strength and add a savory flavor.

Ingredients

Serves 4

  • 1 cup rice (see below for options)
  • 8 cups water (plus more as needed)
  • 1/8 tsp. each of turmeric and coriander (see below for more about spices) 
  • pinch of ginger
  • pinch of salt

Cooking Process

  1. Bring water, salt, and spices to a boil.
  2. Add rice and allow water to come back to a boil before turning down the heat.
  3. Cover the pot, and allow the rice to simmer for about an hour until the rice grains begin to split apart.
  4. Add more water while cooking as needed. Cook longer as needed.

Spice Options

Depending on your constitution, the season, or reason for making congee, you may want to choose different spices. In general, this dish when prepared as instructed above will be mild and depending on your palette, you may not even taste the spices. But they are an important medicine, and once you get to know them you will be able to intuit which spices and how much you need.
